Vegan Passion Fruit & Kiwi Pavlova

So for our second foray into the "aquafaba" miracle we thought we should keep it simple and came up with Vegan Passion Fruit & Kiwi Pavlova.

For those that have yet to discover the wonders of aquafaba it is a very exciting open source development in vegan cuisine, the water from a tin of chick peas can be used as egg white! thus making possible such creations as Vegan Passion Fruit & Kiwi Pavlova and so many more.

We are very excited to be involved with vegan food at a time were where things like this are just emerging, think about it bean water as egg replacer, just imagine the possibilities. we will try to do at least one recipe a week using this idea, lets see where it takes us.

Ingredients: Vegan Passion Fruit & Kiwi Pavlova
  • 150g Chick Pea Water
  • 150g Caster sugar
  • 1/4 tsp Cream of Tartar
  • 1 tsp Corn flour
  • 1 tsp Vinegar
  • Soytoo cream
  • Kiwi fruit
  • Passion fruit
  1. In a stand mixer whisk the chick pea water with the cream of tartar until it foams and starts to increase in volume, slowly add the sugar, keep whisking until all the sugar is incorporated and you have stiff peaks, add corn flour and vinegar and which for another few seconds.
  2. Line 2 baking sheets with baking parchment,divide the meringue evenly between the 2 and with a spatula create your Vegan Passion Fruit & Kiwi Pavlova base's.
  3. Bake in a super low oven for 1 1/2 to 2 hours until dried out.
  4. Cool on wire racks
  5. Assemble the pavlova by spreading cream and fruit on one of the meringues place the second one on top and decorate with more cream and fruit
  6. enjoy

We have noticed that the meringue does start to disintegrate when the cream and fruit are added, but the meringue is stable as long as it is kept dry, so make your meringues and simply assemble just before serving for best results.

Easy Vegan Rock Cakes

This recipe for easy vegan rock cakes is a trip down memory lane, think back to school cookery lessons, what was one of the first cakes we all made, yup rock cakes.

These really are easy vegan rock cakes, kids will love getting involved with this recipe, and the oldies will love a trip down memory lane, there is something strangely comforting about a good old fashioned rock cake with a cup of tea that just brings back memories of a simpler time, a time before google and twitter, a time before great big fancy cup cakes.

Give these easy vegan rock cakes a try you may just surprise yourself just as we did, these are actually delicious nothing fancy nothing difficult just delicious.

Ingredients: makes between 9 and 12 Rock Cakes

  • 225g self raising flour
  • 1 tsp baking powder
  • 110g margarine
  • 55g caster sugar
  • 150g mixed dried fruit
  • 1tsp ground flax seed
  • 3 tsp water
  • 1 - 3 tbsp soya milk
  • demerara sugar for sprinkling
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • almonds to decorate (optional)

In a bowl cream together the margarine and sugar until lighter in colour and all the sugar is incorporated.

Combine the flax seed and 3 tsp's water, add the flour into the creamed margarine and sugar.

Add the dry fruit, cinnamon, ginger and flax in to the mix, add enough soya milk to bring it all together in to a stiff dough.

On a tray lined with baking parchment divide the dough into cake size portions, we made 9 but you could go to 12 with smaller cakes.

Sprinkle with the Demerara sugar or other sugar of your choice light muscovado for example, finish with some almonds and bake at 350° for 15/20 minutes until they start to colour.

Leave to Cool on a cooling rack and enjoy with your favourite cup of tea, Delicious.

Vegan Millionaire Shortbread

We can't take credit for this vegan millionaire shortbread idea it was relayed to us via a friend that saw the original idea on FB, unfortunately we couldn't track it down so apologies and a big thank you to who ever it was for this great idea.

The majority of millionaire shortbread recipes are not vegan what makes this different is "Biscoff", if you haven't tried it then you are missing a treat, it's basically biscuits in a spread, kind of biscuit flavour peanut butter.

Ingredients:
  • 250g Plain Flour
  • 85g Golden Icing Sugar
  • 225g Margarine  (Block)
  • 1 Vanilla pod or Vanilla Extract
  • 1/2 Jar of Biscoff*
  • Plain Chocolate

Cream together the margarine and icing sugar until pale in colour, add vanilla and sieved flour, and mix into a firm dough.

Transfer dough to a baking tray and spread evenly. Bake at 350° until lightly coloured, cool the shortbread base.

Spread the cooled shortbread base with the Biscoff, melt the chocolate in a bowl over some boiling water, pour over the biscoff layer and leave to cool, divide into even pieces and enjoy.

Vegan Rocky Road Fridge Cake

Fridge cake is one of those recipes that can change every single time you make it depending on whats in the fridge. My first encounter with a vegan version of a rocky road fridge cake was over 25 years ago, when visiting Ploughshares cafe in Glastonbury.

Over the years we have made various versions of vegan rocky road fridge cake usually to use up the bit and pieces from the store cupboard, recently this has been our goto recipe.

You can add or subtract thing you like or dislike and tweak the recipe to your personal taste, its a good idea to have various textures as well as different flavours going on. But if you don't like cashews then use some other nuts that you do like macadamias for example.

Ingredients:
  • 250g Plain Chocolate.
  • 100g Vegan Margarine
  • 50g Golden Syrup
  • 175g Digestive Biscuits
  • 50g Vegan Marshmallows
  • 25g Dried Cranberries
  • 30g Whole Grain Breakfast Puffs (Rice Krispies)
  • 25g Raisins
  • 50g Cashews (or mixed nuts)
  • Vegan White Chocolate Buttons.

In a bowl over a pan of boiling water slowly melt the plain chocolate & margarine one melted add the golden syrup, stir until smooth.

Place digestive biscuits in a processor and pulse, you are looking for an even mix of crumbs with some larger pieces, or you could place them in a bag and bash up with a rolling pin, add to chocolate mixture.

Cut the Vegan Marshmallow into small pieces we used some from

Add the marshmallow, cranberries, & raisins, finally chop cashews and throw them in as well, fold everything together and place mixture into a greased or lined baking tin, sprinkle white chocolate drops on the top & place in fridge and chill until set.

Turn the vegan rocky road fridge cake out of the tin and divide into portions as you see fit.. Enjoy.

 

Vegan Celebration chocolate Tray Cake

Vegan Celebration Chocolate Tray Cake

We have all been caught short when a forgotten celebration creeps up on us, with this vegan celebration chocolate tray cake recipe under your belt you will never be caught short again.

It is also a great one for taking to family get togethers where the majority are not vegetarian let alone vegan, it is a delicious moist cake that everyone loves, in fact it usually runs out before the non vegan offerings, thats how nice it is.

Ingredients:
For the Sponge Base
  • 340g Self Raising Flour
  • 60g Cocoa Powder
  • 260g Golden Caster sugar
  • 2tsp Baking Powder
  • 400ml Soya Milk
  • 160ml Rapeseed Oil
  • 2tsp Vanilla Extract
  • 1tsp Chocolate Extract

Combine dry ingredients in a bowl, in a separate jug mix milk, oil & extracts, add wet to dry and blend together. Pour into a tray 33 x 19 cm ( 13" x 9" )

Tap the base of the tray on a work surface to expel large air pockets, bake for approx. 20 mins at   350° or until a skewer comes out clean, turn out and cool on a rack.

For the Frosting:
  • 200g Dark Chocolate
  • 25g Vegan Sour Cream
  • 175g Soya Cream
  • Vegan White Chocolate Drops*
  • Plain Chocolate Drops
  • Plain Chocolate Curls

Place a bowl over boiling water and melt the  dark chocolate,and cream to form a ganache. Cool and place in a food mixer add the sour cream and whip until light , spread over cooled cake and sprinkle with  the chocolate curls and drops. Enjoy, this is one of our go to Vegan Celebration Chocolate Tray Cake
